The Distillery’s focus is on the production of unique bourbon style whiskey spirits conditioned on virgin charred woods from Nova Scotian sources. We use an accelerated aging process that utilizes ultrasonic vibrations generated by our custom Reflux Capacitor to create whiskeys with flavour profiles that rival those aged in oak. By not being limited to the traditional oak barrel aging process and the typical flavours and colours produced, we “Think Outside the Barrel” to introduce maple, cherry, apple, and cedar wood characteristics to create truly unique taste experiences. We do very little blending, producing small “single malt” batches for bottling. Like wine vintages, every run of a particular product may be slightly different from its predecessor.
